Hey foodie friends, we’ve got a real treat for you here… Vegan Sour Cream & Onion Chickpea Crunch Wraps. Recipe Thinspiration doesn’t get better than this!
Delicious, vibrant, vegan and gluten-free wraps filled with a rainbow of vegetables, creamy smashed chickpeas and the best crunchiest EMILY Veg Thins.
EMILY Vegan Sour Cream & Onion Veg Thins and Chickpea Crunch Wraps [serves 3]
⭐︎Make the smashed chickpeas: lightly mash 240g (1 tin) chickpeas until chunky. Stir in 1 tbsp dairy-free yoghurt or mayonnaise, 1 tsp Dijon mustard, 1 tbsp lemon juice, 1 small red onion, chopped small, 1 tbsp chopped parsley/coriander & salt and pepper.
⭐︎Spread 3 gluten-free tortilla wraps with hummus & top with some salad leaves.
⭐︎Add on the smashed chickpeas, 100g sliced cucumber & 1 red pepper in strips & lots of EMILY Vegan Sour Cream & Onion Veg Thins & fresh parsley.
⭐︎Roll neatly and wrap up with string for pure presentation perfection.
